A fast, high-protein beef and broccoli stir-fry — about 38g protein and on the table in 20 minutes.
Ingredients
- 5 oz (140g) lean flank or sirloin steak, sliced thin
- 2 cups broccoli florets
- 3/4 cup cooked jasmine or brown rice
- 1 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 clove garlic and 1 tsp grated ginger
Instructions
- Heat a wok or large pan over high heat with the sesame oil.
- Sear the sliced beef for 1–2 minutes until browned, then remove.
- Add the broccoli, garlic and ginger and stir-fry for 3–4 minutes until crisp-tender.
- Return the beef, add the soy sauce, and toss for 1 minute.
- Serve over rice.

Slice the beef against the grain for tenderness, and keep the heat high so the vegetables stay crisp instead of steaming.
